Ingredients

  • 2 cups Cherry Tomatoes Cut into fourths
  • ½ tsp Sea Salt
  • 1 Shallot Finely diced
  • 1 Clove of Garlic Finely minced
  • ¼ cup Basil Cut into thin strips
  • 2 tbsp Olive Oil
  • ½ tsp Sea Salt

Optional For Serving

  • Sourdough Bread* or French Country Bread** Toasted and rubbed with garlic clove
  • Crackers
  • Pasta

Instructions

  • Quater your tomatoes and add to a mixing bowl. Add the sea salt and gently mix, let sit for 5 minutes.
  • Add your shallot, garlic, basil, and olive oil to the bowl and gently mix until combined and the tomatoes are coated with the olive oil. Let this sit for at least 10 minutes before serving, it will help the flavors to marry.
  • My favorite way to serve this is on top of toasted sourdough* or French country bread** or with crackers. If you want something lighter, try adding it to a salad or make it a meal by putting this on top of fresh pasta!
  • While this is best served fresh, you can place it in an airtight container in the fridge for up to 3 days. Bring to room temperature again before serving.
