Ingredients

  • 3 cups Medjool Dates Pitted
  • cup Sun Butter or Peanut Butter Or nut butter of choice
  • 1 tbsp Vanilla Bean Paste or Vanilla Extract
  • ¾ tsp Sea Salt
  • 1 cup Oats Gluten-free if needed
  • ½ cup Hemp Seeds
  • 1 to 2 tbsp Plant-Based Milk Optional
  • ½ cup Dark Chocolate Chips

Instructions

  • Place the pitted dates, sun butter or peanut butter, vanilla, and salt into a food processor and blitz until they come together as a paste. Note, if your dates are dry, you can soak them in boiling water for 5 to 10 minutes, drain, and use. This will plump them back up.
  • Place a skillet over medium heat and add your oats. Mix frequently until the oats smell nutty and are starting to turn a light golden color. This should take about 5 minutes.
  • Add the toasted oats and hemp seeds to the food processor and pulse until the oats and hemp seeds are incorporated. If the mixture is still very dry and will not hold together, add in the plant-based milk, starting with the lesser amount, as you do not want these to get too wet. Add in the chocolate chips and pulse until the chocolate chips are distributed in the mixture.
  • Using a cookie scoop or your hands, roll the mixture into bite sized ball and place on a baking sheet. Once done, place in the fridge for 30 minutes to chill, and then you have a healthy snack!
  • Storage Instructions: Store Date Cookie Dough Bites in an airtight container in the refrigerator for up to 1 week. For longer storage, freeze the bites in a sealed container for up to 3 months.
