- 2 large Very Ripe Bananas Mashed
- 1 tsp Vanilla Extract or Vanilla Bean Paste
- ½ cup Unsweetened Salted Peanut Butter
- ⅛ tsp Sea Salt
- 2 cups Oats Gluten-free if needed
- ¼ cup Dark Chocolate Chips
Preheat oven to 350℉ and line baking sheets with parchment paper or silicone baking mats.
Peel bananas and mash in a medium mixing bowl. Add the rest of the ingredients, and stir to combine.
Using a tablespoon or spoon, scoop 1 tablespoon of the cookie dough and drop it on the baking sheet. Repeat until the baking sheet is full. Then gently flatten the cookie dough with your fingers.
Bake for 8 to 10 minutes, or until the cookies have set and are just beginning to brown. Let cool for 5 to 10 minutes and then remove from the cookie sheet, and let them cool fully on a cooling rack.
Store leftover cookies in an airtight container on the counter for up to 3 days, in the fridge for up to 2 weeks, or in the freezer for up to 3 months.
