Ingredients

  • 2 15 oz cans Chickpeas Drained, rinsed, and mashed
  • 8 oz Plant-Based Plain Cream Cheese
  • ½ cup Plant-Based Shredded Cheddar Cheese
  • ¼ cup Nutritional Yeast
  • 2 Jalapeño Finely diced
  • ½ Red Onion Finely diced
  • 2 cloves Garlic Minced
  • ½ tsp Sea Salt
  • ¼ tsp Black Pepper
  • 6 to 8 Large Tortillas

Instructions

  • Add the drained and rinsed chickpeas to a large mixing bowl. Use a potato masher or forks to mash the chickpeas into a chunky puree.
  • Stir in the plant-based cream cheese, plant-based shredded cheddar cheese, nutritional yeast, jalapeños, red onion, garlic, salt, and pepper, and incorporate with your chickpeas until there are no large chunks of cream cheese left.
  • Preheat your airfrier to 375°F and line a baking sheet with parchment paper or a silicone baking mat.
  • Spread a thin layer of the jalapeños popper chickpea mixture onto the large tortilla wraps. Roll each tortilla tightly, then slice it into 1-inch pieces.
  • Place the slices, cut side down, onto your baking sheet and bake in the airfrier for 3 to 5 minutes, or until the cheese is melted. Once the cheese is melted and the tortilla is toasty, they are ready to enjoy!
  • Storage Instructions: Store leftover pinwheels in an airtight container in the refrigerator for up to 3 days. The chickpeas help the filling stay hearty, but the pinwheels will soften slightly and re-crisp beautifully when reheated. To freeze, place cooked and cooled pinwheels on a baking sheet to flash freeze, then transfer them to a freezer-safe bag or container for up to 2 months
  • Reheating Instructions: Reheat refrigerated pinwheels in the air fryer at 350°F for 3 to 5 minutes until hot, crisp, and melty again. From frozen, place the pinwheels directly in the air fryer at 350°F for 6 to 8 minutes or until warmed through and crisp on the outside
