Miso Maple Roasted Carrots

- 1 lb Carrots Sliced in half lengthwise
- 2 cloves Garlic Minced
- 2 tbsp Olive Oil
- 2 tbsp Nutritional Yeast
- 2 tbsp Maple Syrup
- 2 tbsp White Miso
- 2 tsp Apple Cidar Vinegar
- 2 tsp Soy Sauce or Tamari
- ½ tsp Red Pepper Flakes Optional, to taste
- ½ tsp Black Pepper Optional, to taste
Preheat the oven to 375°F.
Next, make the glaze by whisking together all the ingredients: garlic, olive oil, nutritional yeast, maple syrup, miso, apple cider vinegar, soy sauce, crushed red pepper, and black pepper.
Next, add your carrots to the cast-iron skillet or baking dish and pour the glaze over them, and mix them.
Roast the carrots for about 35 minutes, removing them halfway through to toss the mixture around to ensure the glaze is well incorporated into the carrots. Remove the dish from the oven once the desired texture is achieved. Once removed from the oven, toss the carrots in the glaze again to make sure all carrots are coated and serve!
Storage Instructions: Store any leftovers in an airtight container in the refrigerator for up to 4 days.
Reheating Instructions: Reheat in the oven at 350°F until warmed through, or toss them in a skillet over medium heat to restore their caramelized edges.
