No-Bake Chewy Granola Bars

Ingredients

  • 1 cup Natural Peanut Butter
  • ½ cup Maple Syrup
  • 1 tsp Vanilla Extract or Vanilla Bean Paste
  • ½ tsp Cinnanom
  • cups Rolled Oats Gluten-Free is need
  • ½ cup Oat Flour or Almond Flour
  • 1 cup Dark Chcolate Chips

Instructions

  • In a microwave-safe dish, place the peanut butter and maple syrup and melt to create a runny sauce. Heat and mix in 30-second intervals. Once you have reached a loose sryup texture, add in the vanilla and cinnamon. Mix to combine.
  • In a mixing bowl, add in your oats, oat or almond flour, and chocolate chips. Then add in your peanut butter syrup and mix to combine. This is a thick mixture and will take some work to mix together fully. Let this mixture sit for 5 minutes. This will help the oats absorb some of the peanut butter sauce, creating a firmer bar.
  • Line your 8" x 8" baking dish with parchment paper and pour your granola bar mixture into the pan. Using the bottom of a measuring cup or drinking glass, start to press the granola mixture into an even layer in the pan. Once you have achieved an even layer, place it in the freezer for 30 minutes to chill and solidify.
  • After the granola bars have chilled, remove them from the pan and cut the pan in half down the middle. Then cut into roughly 1 inch wide rectangles, resulting in 16 granola bars.
  • Storage Instructions: Store your granola bars in an airtight container in the refrigerator for up to 2 weeks. For the best "chewy" texture, keep them chilled until right before you are ready to eat, as they can soften significantly if left in a warm room for too long.
