Ingredients

  • 1 cup Raw Cashews Soaked and drained
  • 5 oz Silken Tofu
  • 1 2" x 3" Sheet Roasted Nori
  • ¼ cup Nutritional Yeast
  • ¼ cup Lemon Juice About the juice of 2 lemons
  • 3 cloves Garlic
  • 2 tsp Caper Brine
  • 1 tsp Dijon Mustard
  • 1 tsp White Miso Paste
  • ½ tsp Sea Salt
  • ½ tsp Black Pepper
  • Up to ¼ cup Water

Instructions

  • Soak the cashews in boiling water for 1 hour to soften, then drain and rinse.
  • Place all ingredients into a high-speed blender and blend until smooth. Note stop as needed and scrape down the sides to ensure fully blended. Stop and taste the seasoning and adjust as needed. If the dressing looks too thick, add up to ¼ cup of water and blend again. This dressing will thicken up as it cools.
  • Storage Instructions: Keep your dressing in a sealed glass jar in the refrigerator for up to seven days. Because this is a natural emulsion, it may thicken slightly as it sits; simply give it a vigorous shake or whisk in a teaspoon of water to return it to your desired consistency.
