- 2 lbs Sweet Potatoes Peeled
- 2 tbsp Olive Oil
- 1 tsp Paprika
- 1 tsp Garlic Powder
- 1 tsp Sea Salt
- ½ tsp Black Pepper
Preheat the oven to 400℉ and line 2 baking sheets with parchment paper or a silicone baking mat.
Cut the sweet potatoes into sticks ¼ to ½ inch wide and 3 inches long. Place them in a bowl with cold water and let soak for 30 minutes to get rid of some of the starch.
Drain and dry the sweet potatoes and toss them with the oil. Mix the spices, salt and pepper in a small bowl, and toss them with the sweet potatoes. Spread them out on 2 rimmed baking sheets.
Bake until brown and crisp on the bottom, about 25 to 30 minutes, or until they have reached your desired level of crispness. Serve hot.
These are best served fresh but you can store the leftovers in an airtight container for up to 3 days and reheat in the oven at 350℉ until warmed through.
