Tofu Mayo

- 10 oz Silken Tofu
- ½ cup Raw Cashews Soaking in boiling water for 1 hour
- 2 tbsp Mustard
- ¾ tsp Black Salt
- ½ tsp Mushroom Seasoning
- 2 tbsp Apple Cider Vinegar or White Vinegar
- 1 clove Garlic
Pour boiling water over cashews and let soak for 1 hour. Then drain and add to the blender.
Add everything to a high-speed blender and blend until well combined, stopping to scrape down the edges as necessary.
Pour into an air-tight container and will keep in the fridge for a week.
