Preheat oven to 425°F and line your baking sheet with parchment paper or a silicone baking mat.
On the lined sheet pan, add the plant-based sausage, Brussels sprouts, delicata squash, and red onion. Next, toss the sausage and veggies in the olive oil, salt, garlic powder, and pepper until everything is evenly coated. To ensure everything gets crispy, spread the ingredients out as evenly as possible on the sheet pan.
Place the tray bake in the oven for 15 minutes, remove and mix around your veggies and sausage, add in the walnuts, then place back in the oven for another 10 to 15 minutes, or until the Burssel sprouts and squash are fork tender
While your tray bake veggies are roasting, cook your rice or quinoa according to the package instructions.
Next, move to make the dressing. Add all of the dressing ingredients to a bowl or glass jar and whisk everything together until it is emulsified. You can add water to the dressing to thin it out if you prefer a thinner dressing. Also, taste and adjust the seasonings to your liking.
Once the tray bake is done, serve the sausage and veggies over a bed of your rice or quinoa and top with the maple mustard dressing, and if you would like, a sprinkle of nutritional yeast!
Storage Instructions: Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors deepen as it sits, making it even more delicious the next day. To freeze, let the tray bake cool completely, then transfer to a freezer-safe container or bag and freeze for up to 3 months.
Reheating Instructions: Reheat leftovers in a 375°F oven for 10 to 12 minutes until warmed through and slightly crisp again. For frozen portions, let thaw overnight in the refrigerator before reheating, or bake directly from frozen at 350°F for 20 to 25 minutes.
