Thai-Inspired Kale Salad

- 3 cups Lacinato or Curly Kale Finely chopped
- 1 tbsp Lime Juice About the juice of 1 lime
- 2 cups Green Cabbage Finely chopped
- 1 cup Cilantro Finely chopped
- ½ cup Mint Finely chopped
- 1 Red Bell Pepper or 3 Fresno Chilies Deseeded and diced
- 1 English Cucumber or Other Cucumber Finely chopped
- 1 Avocado Diced
- ½ cup Peanuts
Clean and de-stem your kale. Then finely chop and add to a mixing bowl. Add about 1 tbsp of lime juice and massage the kale for a few minutes. This will make the texture of the kale, making it more tender.
Then finely chop 2 cups of cabbage, cilantro, and mint and add them to the mixing bowl. Then dice your red bell pepper or Fresno chilies, cucumber, and avocado and add to the mixing bowl, followed by the edamame and peanuts.
Mix the salad, until it is incorporated. Then feel free to add in my crispy tofu* and Thai-Inspired peanut sauce**. Then toss and serve!
Store leftovers in an airtight container in the fridge for up to 4 days.
