In a food processor, place 3 tbsp olive oil, butter beans, bread crumbs, garlic powder, onion powder, chili powder, cumin, nutritional yeast, salt, and pepper. Do not add the fresh herbs yet! Process until well incorporated.
Next, pour the bean mixture into a bowl and fold in the fresh herbs, the cilantro, and green onions. Set this in the fridge for 30 minutes to chill. This will help the binding process. If the mixture is still very dry, you can add another tbsp of oil or water to the mixture to help bind it together.
Portion the bean mixture into roughly ⅓ cup sections, it should create 4 to 5 burgers, and form into patties that are ¼ to ½" thick
Place a medium cast-iron skillet over medium-high heat. Once hot, add in the remaining olive oil. Once your oil is hot, add the burgers to the pan. Do not overcrowd the pan; the burgers can be cooked in batches.
Cook until lightly brown each side. This should take about 3 to 5 minutes per side. Note that these can also grill these burgers. Heat a grill to medium-high, gently oil the grates, and place the burgers onto the grill grates and cook for 3 to 5 minutes per side. Once done, top with your desired toppings and enjoy!
Storage Instructions: Store uncooked or cooked patties in an airtight container in the refrigerator for up to 4 days. If you are stacking them, place a piece of parchment paper between each patty to prevent them from sticking together.
Reheating Instructions: To keep the exterior crispy, reheat your burgers in a skillet over medium heat for 3 minutes per side. You can also use an air fryer at 375°F for 5 minutes to achieve that perfect, just-cooked texture without any added oil.
