White Bean Burgers
Butter Bean Burgers: The Versatile Summer Garden Essential
While the black bean burger has long been the reigning champion of plant-based patties, there is a new, sophisticated contender in town: the Butter Bean Burger. Using large, creamy butter beans as a base, these burgers offer a luxurious, velvety texture that serves as a high-quality canvas for whatever flavors you are craving. Packed with fresh herbs and structured with crispy bread crumbs, these patties are a refreshing departure from the heavier, darker bean burgers we are used to. Whether you are searing them in a cast-iron skillet for that perfect crust or taking them outside to the grill for a smoky finish, these burgers are a bold and satisfying way to shake up your next meal.
The History And Inspiration Behind This Recipe
Bean-based patties have been a cornerstone of vegetarian cooking for decades, originating as a nutritious alternative to meat in various global cuisines. Butter beans, also known as lima beans, have a rich history in Southern culinary tradition, but their mild flavor and buttery consistency make them an ideal candidate for a modern veggie burger. Unlike black beans, which have a very distinct, earthy profile, butter beans are like a culinary chameleon, ready to take on the personality of whatever herbs and spices you introduce to the mix.
My inspiration for this recipe was to create a burger that felt bright rather than heavy. I wanted something that captured the essence of a garden-fresh meal, which is why I focused so heavily on fresh, aromatic herbs. By using bread crumbs to provide that essential bite, I’ve developed a patty that holds its shape beautifully on the bun without feeling dense. It is a dream come true for anyone looking for a versatile plant-based protein that feels sophisticated enough for a dinner party but simple enough for a Tuesday night.
Why You’ll Love These Butter Bean Burgers
This recipe is a standout because it offers a clean, neutral flavor profile that allows your toppings to truly shine. You will love how the butter beans mash into a silky binder while still maintaining enough texture to feel substantial with every bite. The fresh herbs provide a high-vibrancy aroma that wafts through the kitchen as they sear, making the entire experience feel much more gourmet than a standard frozen patty. Plus, these are incredibly easy to customize and prepare in advance, making them a smart choice for meal-preppers who want a high-protein, fiber-rich lunch option that doesn’t feel repetitive.
Fun Flavor Variations For Your Butter Bean Burgers
Why settle for plain when you can get creative with different flavor combinations:
-
Lemon zest and rosemary: Incorporating a teaspoon of fresh lemon zest and finely minced rosemary creates a bright, Mediterranean-inspired burger that pairs beautifully with a dollop of my Tofu Ricotta.
-
Sun-dried tomato burst: Folding in finely chopped sun-dried tomatoes and dried oregano adds a concentrated, savory sweetness that transforms the burger into an Italian-style masterpiece.
-
Smoky chipotle infusion: Adding a teaspoon of adobo sauce and some smoked paprika provides a deep, fiery heat that contrasts perfectly with the creamy butter bean base. Then pair this with my Chipotle Aioli!

Pesto swirl elegance: Stirring a tablespoon of my Fresh Basil Pesto into the bean mixture before forming the patties ensures a vibrant green hue and a rich, garlicky flavor in every bite.

Tips For The Best Butter Bean Burgers
For the best results, follow these simple tips to perfect your Butter Bean Burgers every time:
-
The bean-drying secret: Rinsing your butter beans and then patting them completely dry with a clean kitchen towel before mashing prevents the patties from becoming too mushy or soft.
-
The herb-infusion rule: Using a mix of at least two different fresh herbs—like parsley, cilantro, green onions, and chives—ensures a complex and layered flavor profile that beats dried spices every time.
-
The chilled-set technique: Resting your formed patties in the refrigerator for at least thirty minutes before cooking allows the bread crumbs to hydrate and bind the beans together for a sturdier burger.
-
The cast-iron advantage: Searing your burgers in a hot cast-iron skillet with a thin layer of oil provides superior heat retention, which is the key to getting that golden-brown charred crust on the outside.

White Bean Burgers
Equipment
- Food Processor
- Mixing Bowl
- Medium Cast-Iron Skillet or Medium Skillet
Ingredients
- 1 15 oz can Butter Beans Drained, rinsed, and dried
- 4 tbsp Olive Oil Divided
- 1 cup Bread Crumbs Gluten-Free if needed
- ½ tsp Garlic Powder
- ½ tsp Onion Powder
- ½ tsp Chili Powder
- ½ tsp Cumin
- 2 tbsp Nutritional Yeast
- ½ tsp Sea Salt Adjust to taste
- ½ tsp Black Pepper Adjust to taste
- 1 tbsp Fresh Cilantro Minced
- 1 tbsp Green Onions Minced
Instructions
- In a food processor, place 3 tbsp olive oil, butter beans, bread crumbs, garlic powder, onion powder, chili powder, cumin, nutritional yeast, salt, and pepper. Do not add the fresh herbs yet! Process until well incorporated.
- Next, pour the bean mixture into a bowl and fold in the fresh herbs, the cilantro, and green onions. Set this in the fridge for 30 minutes to chill. This will help the binding process. If the mixture is still very dry, you can add another tbsp of oil or water to the mixture to help bind it together.
- Portion the bean mixture into roughly ⅓ cup sections, it should create 4 to 5 burgers, and form into patties that are ¼ to ½" thick
- Place a medium cast-iron skillet over medium-high heat. Once hot, add in the remaining olive oil. Once your oil is hot, add the burgers to the pan. Do not overcrowd the pan; the burgers can be cooked in batches.
- Cook until lightly brown each side. This should take about 3 to 5 minutes per side. Note that these can also grill these burgers. Heat a grill to medium-high, gently oil the grates, and place the burgers onto the grill grates and cook for 3 to 5 minutes per side. Once done, top with your desired toppings and enjoy!
- Storage Instructions: Store uncooked or cooked patties in an airtight container in the refrigerator for up to 4 days. If you are stacking them, place a piece of parchment paper between each patty to prevent them from sticking together.
- Reheating Instructions: To keep the exterior crispy, reheat your burgers in a skillet over medium heat for 3 minutes per side. You can also use an air fryer at 375°F for 5 minutes to achieve that perfect, just-cooked texture without any added oil.
