White Pizza Sauce

- 1 tbsp Vegan Butter Divided
- 2 cloves Garlic Minced
- 1 Shallot Roughly chopped
- 10 oz Silken Tofu
- 2 cups Vegetable Broth
- 1 tbsp Lemon Juice About the juice of ½ a lemon
- ¼ cup Nutritional Yeast
- 1½ tbsp AP or Gluten-Free Flour
- ½ tsp Sea Salt
- ¼ tsp Black Pepper
- 1 tbsp Fresh Parsley Optional and finely chopped
- 1 tbsp Fresh Basil Optional and finely chopped
Place a medium saucepan over medium heat and add ½ tbsp of vegan butter to melt. Once the vegan butter is melted, add the shallot and cook for 3 to 5 minutes, until the shallot is transparent, then add the garlic and cook until the garlic becomes fragrant, about a minute. Then remove from heat.
Add the silken tofu, vegetable broth, cooked garlic and onion mixture, lemon juice, and nutritional yeast together until very smooth to make the cream.
Melt the other ½ tbsp of vegan butter over medium-low heat in the same medium saucepan you used to cook the onions and garlic. Once the butter is melted, whisk in flour and create a roux.
Once the base of the roux is formed, slowly whisk in the cream to avoid clumps.
Simmer for about 5 minutes, stirring often, until the sauce is thick and creamy. Stir in the salt, pepper, and parsley, basil, if you are using. Taste and adjust seasoning to your preference.
