White Pizza Sauce

- High Speed Blender
- Medium Saucepan

Ingredients
- 1 tbsp Vegan Butter Divided
- 2 cloves Garlic Minced
- 1 Shallot Roughly chopped
- 10 oz Silken Tofu
- 2 cups Vegetable Broth
- 1 tbsp Lemon Juice About the juice of ½ a lemon
- ¼ cup Nutritional Yeast
- 1½ tbsp AP or Gluten-Free Flour
- ½ tsp Sea Salt
- ¼ tsp Black Pepper
- 1 tbsp Fresh Parsley Optional and finely chopped
- 1 tbsp Fresh Basil Optional and finely chopped
Instructions
- Place a medium saucepan over medium heat and add ½ tbsp of vegan butter to melt. Once the vegan butter is melted, add the shallot and cook for 3 to 5 minutes, until the shallot is transparent, then add the garlic and cook until the garlic becomes fragrant, about a minute. Then remove from heat.
- Add the silken tofu, vegetable broth, cooked garlic and onion mixture, lemon juice, and nutritional yeast together until very smooth to make the cream.
- Melt the other ½ tbsp of vegan butter over medium-low heat in the same medium saucepan you used to cook the onions and garlic. Once the butter is melted, whisk in flour and create a roux.
- Once the base of the roux is formed, slowly whisk in the cream to avoid clumps.
- Simmer for about 5 minutes, stirring often, until the sauce is thick and creamy. Stir in the salt, pepper, and parsley, basil, if you are using. Taste and adjust seasoning to your preference.
