The History and Inspiration Behind This Recipe
Ginger molasses cookies have deep roots in European baking traditions, particularly in England and the Netherlands, where early versions were made with treacle and warming spices like ginger and cinnamon. When these recipes made their way to America during the colonial era, molasses became a staple sweetener — giving rise to the chewy, spiced cookies we know and love today.
This recipe also holds a special place in my heart because my grandmother always had chewy molasses cookies in her house. They were one of her absolute favorites, and the smell of them baking instantly takes me back to her cozy kitchen. That nostalgic flavor — rich molasses, a hint of spice, and that soft, chewy bite — inspired me to recreate a plant-based version that feels like a warm hug from the past.

Ginger Molasses Cookies
Equipment
- Electric or Stand Mixer Optional
- Baking Sheets
- Mixing Bowls
- Cooling Rack
Ingredients
- 2 tbsp Ground Flaxseeds
- 6 tbsp Water
- 3 cups All-Purpose Flour or 1:1 Gluten-Free Flour
- 1 tbsp Ground Ginger
- 2 tsp Cinnamon
- ½ tsp Allspice
- 1 tsp Sea Salt
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- 1½ cups Plant-Based Butter At room temperature
- ¾ cup Molasses
- 1 cup Cane Sugar
- 1 tsp Vanilla Extract or Vanilla Bean Paste
- ¾ cup Turbinado Sugar
Instructions
- Preheat the oven to 325°F and line your baking sheets with parchment paper or silicone baking mats.
- In a small bowl, mix together your ground flax and water to create your flax egg. Once mixed, set aside for 5 to 10 minutes for it to gel.
- In a large bowl, whisk together flour, ginger, cinnamon, allspice, salt, and baking powder.
- In another bowl, using an electric mixer or stand mixer, beat together the plant-based butter, molasses, and sugar on medium-high until the mixture is superlight and fluffy, about 3 to 5 minutes. Scrape down the sides of the bowl and add in your flax egg and beat well. Next, add in your vanilla, and beat until everything is well combined, again stopping to scrape down the bowl as necessary.
- Add the dry ingredients to the wet ingredients, all at once, and mix on low speed until just incorporated. Do not overmix.
- Chill the dough in the refrigerator for 30 to 45 minutes, until firm enough to roll.
- Once your dough is chilled, using either your hands or a cookie scoop, roll heaping tablespoons of dough into balls, then roll them in turbinado sugar. If the dough becomes too soft to roll, put it back in the refrigerator for 10 to 15 minutes.
- Place balls on your linked baking sheets, about 2 inches apart, and bake until the cookies are puffed, golden brown around the edges, and baked through and the tops spring back slightly when touched, 12 to 15 minutes.
- Let the cookies cool for 2 to 3 minutes on the baking sheet and then move to a cooling rack to allow the cookies to fully cool.
- Storage Instructions: Store cookies in an airtight container at room temperature for up to 5 days or refrigerate for up to a week to maintain their soft texture. For longer storage, freeze baked cookies in a sealed freezer-safe container or bag for up to 3 months. Thaw at room temperature before serving for the best texture and flavor.
