Jackfruit Barbacoa Tacos
Equipment
- Large Sauté Pan
Ingredients
- 1 tbsp Avocado Oil
- 1 medium White Onion Diced
- 6 cloves Garlic Minced
- 3 14 oz Cans Young Jackfruit in Water or Brine Drained, rinsed, patted dry, and shredded
- 3 Chipotle Peppers in Adobo Diced
- 1 to 1½ cups Water
- 3 tbsp Agave or Maple Syrup
- 3 tbsp Soy Sauce or Tamari
- 1½ tbsp Apple Cider Vinegar
- 2½ tsp Cumin
- 2½ tsp Oregano
- 2 tsp Smoked Paprika
- 2 Bay Leaves
- 1 tsp Sea Salt
- ½ tsp Black Salt
- 2 tbsp Lime Juice About the juice of 1 lime
Optional For Serving
- Corn or Flour Tortillas
- White Onion
- Radishes
- Purple Cabbage
- Cilantro
- Jalapeno Cashew Cream*
- Fresh Lime Juice
Instructions
- Drain, rinse, pat dry, and shred the jackfruit. Make sure to remove any seeds while shredding the jackfruit. Set aside.
- Heat a large sauté pan on medium-high heat and 1 tablespoon of avocado oil. Add the onion and cook until soft and translucent, about 5 to 7 minutes. Mince the garlic and add to the pan, continue to cook for 2 more minutes, or until the garlic becomes fragrant.
- Add in the shredded jackfruit to the pan. Allow it to slightly brown and sweat out the liquid. Tossing only occasionally, for about 5 to 7 minutes.
- Chop up the chipotle peppers, note don't clean off the adobo sauce off the peppers, you want all that flavor! Add the chopped peppers to the jackfruit along with 1 extra tablespoon of adobo sauce.
- Add in the water, agave or maple syrup, soy sauce or tamari, apple cider vinegar, cumin, oregano, smoked paprika, bay leaves, sea salt, and pepper.
- Bring everything to a boil then cover and reduce to a simmer over low heat. Let everything simmer for 20 minutes. During this process, you want some of the water to cook out, but you do not want it to get dry, here you can add an additional ½ cup of water.
- Uncover the pan and allow to cook for another 5 to 10 minutes or until most of the liquid has been absorbed.
- Add the lime juice and stir to combine. Here, taste and add more lime juice, salt, or chipotle peppers, for your preference.
