- Glass Jar
Ingredients
- ⅓ cup Olive Oil
- 2 tbsp Red Wine Vinegar
- 4 Bay Leaves
- 3 cloves Garlic Thinly sliced
- ⅓ tsp Red Pepper Flakes Optional
- 1 tbsp Lemon Zest About the zest of 1 lemon
- 1 tbsp Fresh Thyme Leaves Coarsely chopped
- 1 tsp Fresh Rosemary Coarsely chopped
- ½ tsp Fennel Seeds
- 2 cups Mixed Olives I prefer to use pitted
Instructions
- Combine the olive oil, vinegar, bay leaves, and garlic in a small saucepan and heat over medium-low heat until the garlic starts to brown, about 6 to 8 minutes. Remove from the heat and stir in the red pepper flakes, lemon zest, thyme, rosemary, and fennel seeds.
- Place the olives in a wide-mouthed jar and pour in the olive oil mixture. Shake the jar to coat the olives. Refrigerate for two hours before serving to allow the flavors to marinate. But when going to serve, pull the olives out of the fridge for the olive oil to come to room temperature.
- Before serving, shake the jar to redistribute the seasonings.
