  • ½ cup Dark Chocolate Chips

  • Split dates open and press each one down onto a sheet of parchment paper, making sure they overlap a little so they stick together. Once all of the dates are on the parchment paper, place another piece of parchment paper over the dates. Then, take a rolling pin and roll the dates out into a thin and even layer. Once the dates are rolled into a thin layer, place the date sheet, with the parchment paper remaining under the dates, onto a baking sheet.
  • Drizzle peanut butter on top of the dates and use a spoon to spread it across the dates.
  • Place the dark chocolate and coconut oil in a microwave-safe dish. Microwave for approximately 30 seconds, take out and stir until all the chocolate is melted and the coconut oil is incorporated. Microwave for a few more seconds if all the chocolate is not melted after mixing.
  • Drizzle the melted chocolate and coconut oil over the date bark, and use a spoon or spatula to spread it around evenly so it coats all of the date bark.
  • Optional: Sprinkle any desired add-ins on top of the melted chocolate, like pretzels, peanuts, pecans, and or flakey sea salt. I like adding pretzels on top!
  • Place the baking sheet into the freezer for at least 30 minutes, or until the chocolate has completely set.
  • Once the chocolate has set, remove the bark from the freezer, cut the bark into 10 to 12 pieces, and enjoy.
  • Store leftovers in an airtight container in the fridge or freezer. These will keep in the fridge for a week and will keep in the freezer for 3 months. Note if you store the bark in the freezer, the dates will be very hard right out of the freezer. Please let the bark sit at room temperature for a few minutes before enjoying it.
