Tips For Perfect Walnut Chocolate Chip Cookies
For the best results, follow these simple tips to perfect your walnut chocolate chip cookies every time:
-
Toast the Walnuts: To bring out their rich, nutty flavor, toast the walnuts lightly in the oven before adding them to the dough. This step makes a big difference in flavor!
-
Use Room Temperature Ingredients: Make sure your butter (or vegan butter) and other ingredients like plant-based milk are at room temperature. This helps the dough come together more smoothly.
-
Chill the Dough: For even better texture and to prevent spreading, chill the cookie dough in the fridge for about 30 minutes before baking.
-
Don’t Overbake: For the perfect chewy texture, take the cookies out of the oven when they’re still slightly soft in the middle. They’ll firm up as they cool.

Walnut Chocolate Chip Cookies
Equipment
- Mixing Bowl
- Stand Mixer Optional
- Baking Sheets
- Cookie Scoop Optional
- Cooling Rack
Ingredients
- ¼ cup Vegan Butter Softened at room temperature
- ½ cup Cane Sugar
- ½ cup Light Brown Sugar Lightly packed
- ¼ cup Unsweetened Plant-Based Milk Plus more if needed
- ½ tsp Vanilla Bean Paste or Vanilla Extract
- 2 cups AP Flour Can substitute GF Flour, just make sure it is a 1:1 GF Flour
- 1 tsp Baking Soda
- ½ tsp Sea Salt
- ½ cup Vegan Chocolate Chips or Chunks
- ⅓ cup Raw Walnuts Roughly chopped
- Flakey Sea Salt Optional to sprinkle on top of the cookies
Instructions
- Preheat the oven to 350°F and line two cookie sheets with parchment paper or silicone mats.
- Place a small saute pan over medium heat, then add the walnuts to the dry pan and roast for 5 to 7 minutes. Once the walnuts start to release strong aromas, they can be removed from the pan, and set aside to cool before adding them to the dough.
- In a large bowl using a handheld mixer or a stand mixer with the paddle attachment, beat the softened vegan butter and brown sugar for 1 to 2 minutes until creamy.
- Add the vanilla or vanilla paste and the plant-based milk and mix to combine.
- Next, stop the mixer and add the flour, baking soda, and salt. Turn the mixer on low speed, and mix until just combined. If the dough seems a little dry, you can add another tablespoon of plant-based milk and mix to incorporate.
- Add in the chocolate chips and walnuts to incorporate, either by hand or using the mixer.
- Using a 1½ Tablespoon cookie scoop, scoop a cookie, then place the dough on the prepared baking sheets. Make sure to leave a little room between each cookie as they will spread while baking. Then, slightly flatten each dough ball so the cookies will bake evenly.*
- Optional: Sprinkle each cookie ball with flaky sea salt.
- Bake for 11 to 13 minutes, until the cookies are barely golden around the edges. They will be puffy and lightly colored. They will still be soft when you pull them out of the oven, the cookie will continue to cook for a few minutes after you remove them from the oven.
- Let the cookies cool on the cookie sheet for 3 to 5 minutes, then transfer to a cooling rack for an additional 10 minutes. The cookies will firm up as they cool.
- Store in an airtight container at room temperature for 5 to 7 days, or freeze for up to 3 months.
