Ingredients

  • 25 Dates Pitted
  • 1 13.5 oz can Coconut Cream Use the solid part on top, plus at least 3 tbsp of the coconut cream, but use more as needed
  • 2 tsp Vanila Extract or Vanilla Bean Paste
  • ½ tsp Sea Salt
  • ½ tsp Cinnamon

Instructions

  • Add the dates to a small bowl and cover with boiling water for 15 minutes to soften.
  • Using tongs, or your hands if the dates are cool enough, transfer the soaked dates to a high-powered blender. The dates do not need to be totally drained, but too much water will result in a thinner consistency than you want. Next, add in the solid part of your coconut cream. Blend until smooth, adding more coconut cream liquid as needed to reach your desired consistency. I normally only add 3 tbsp of additional coconut cream liquid. You can use the leftover coconut cream liquid to make chia seed pudding*!
  • Next, add the vanilla, salt, and cinnamon to the blender and blend until combined. Scrape down the sides of your blender until everything is smooth and evenly incorporated.
  • Cool your date caramel completely, then cover and refrigerate.
  • Storage Instructions: Store in an airtight container or glass jar in the refrigerator for up to 1 week. Stir before using, as it may thicken slightly when chilled.
  • Reheating Instructions: If the caramel thickens too much in the fridge, warm gently in the microwave for 10 to 15 seconds or stir in a splash of plant-based milk until smooth and creamy again.
