Ingredients

  • cups Fine Blanched Almond Flour
  • 3 tbsp Coconut Oil Melted and cooled
  • 2 tbsp Maple Syrup
  • 1 tsp Vanilla Extract or Vanilla Bean Paste
  • ¼ tsp Sea Salt
  • 1 batch Date Caramel* You will not use the full batch, but the leftovers of this caramel never last long
  • ¾ cup Dark Chocolate
  • 1 tbsp Coconut Oil

Instructions

  • Preheat oven to 350 F. Line an 9” x 9” square baking pan with parchment paper. If you want thicker layers, use the 8" x 8" pan.
  • In a mixing bowl, add the almond flour, melted and cooled coconut oil, maple syrup, vanilla, and salt. Mix together with a fork until it forms a nice thick crumb texture. Pour this into the pan and use your fingers to evenly press down into the pan. Bake for 12 to 15 minutes, or until the crust is golden-brown. Allow crust to cool for at least 10 minutes before adding caramel.
  • While the crust is baking, make your date caramel. After the crust has cooled, pour ½ of the date caramel on top of the crust and spread it into an even layer. Here you can adjust and add more or less of the caramel depending on your personal preference.
  • Place the pan in the freezer to let the caramel harden for at least 30 minutes before adding the chocolate.
  • After your date caramel has set and hardened, make the chocolate layer. Add the dark chocolate and coconut oil to a microwave-safe bowl and microwave on high in 30-second increments, stirring in between until the chocolate is completely melted. If you prefer, you can also melt the chocolate and coconut oil in a small saucepan over low heat.
  • Pour the melted chocolate over the caramel layer and tilt the pan side-to-side to evenly distribute the melted chocolate. Place in the freezer for at least 20 minutes until the chocolate is completely hardened and the bars are cooled.
  • Remove the bars from the pan and cut them into 18 bars, or 16 if you used the 8" x 8" pan, that resemble Twix bars. To do this, cut the entire pan of bars in half, and then cut each half into 9, 1-inch bars, not squares. If you heat up your knife under warm water, the chocolate will cut cleaner, but some cracking might occur. This is totally normal and does not affect the taste at all!
  • Storage Instructions: Store the Healthy Twix Bars in an airtight container in the refrigerator for up to 1 week. For longer storage, freeze the bars for up to 2 months; they are delicious straight from the freezer!
