Hello, and welcome to Bree’s Bold Bites—your new favorite spot for delicious, approachable plant-based recipes! I’m Bree, a 30-something woman living in the Midwest with my husband and our two adorable puppies, Winston and Gus. I am also very close with my family, so they might be making an appearance on the blog as well! I created this blog to share my love for cooking vibrant, wholesome meals that are as satisfying as they are nourishing. Whether you’re a long-time vegan or simply looking to explore more plant-based meals, I’m here to show you that eating with intention and flavor can be a fun and exciting journey.

In January 2020, I decided to transition to a vegan lifestyle. It wasn’t just about the food—it was about reducing my carbon footprint, protesting the inhumane treatment of animals, and improving my health. I’ve always loved animals, and adopting a plant-based diet felt like the right way to honor them and make a positive impact. I also have two adorable pups, Winston and Gus, who remind me daily why it’s important to protect animals and choose a lifestyle that supports their well-being. I’m currently trying to convince my husband to add a cat to our family, which would complete the dream trio! Cooking plant-based also fed my passion for food and became an escape, allowing me to reconnect with the joy of preparing meals. As I discovered new ways to make plant-based dishes flavorful and satisfying, cooking became more than just a necessity—it became my creative outlet and my source of comfort.
Before I embraced plant-based cooking, I was an immigration and compliance attorney. I found myself feeling increasingly burned out and disconnected from the work that had once motivated me. To cope, I started burying myself more and more in the kitchen, where I could lose myself in creativity and flavors. The more I cooked, the more I realized that this was the path I wanted to pursue. I wanted to share my passion for plant-based cooking and help others discover the joy and healing that can come from preparing meals with fresh, wholesome ingredients.

When I’m not in the kitchen, you can find me out on a run, with my nose buried in a fantasy book, or traveling and hiking around the world! Life is all about balance, and for me, it’s about finding joy in both the simple and adventurous moments.
