Cooking Up Chaos and Creativity Over Three Months

Behind the Bold Bites: A Life Update from the Kitchen

The last few months have been a whirlwind—both in and out of the kitchen. If you’ve been following along, you might’ve noticed a little more consistency in my posting, some new recipes popping up, and (hopefully!) a deeper sense of connection through the food I share. That’s because a big shift happened behind the scenes: I officially left my traditional career to pursue this wild, flavorful, soul-filling dream full-time.

Yep, I stepped away from my structured, reliable, very “adult” job and made the leap into food blogging, recipe development, photography, and all things plant-based. It wasn’t a decision I made lightly. I spent years in a field that never quite lit me up the way creating recipes and sharing them with you does. I used to bury myself in the kitchen on weekends—cooking, photographing, writing—because that was where I felt the most like me. And after a lot of reflection (and a few deep breaths), I realized it was time to stop treating that passion like a side dish

So here we are—knee-deep in banana bread (for a little sneak peek, I have a brown butter miso banana bread coming up, but it took about 10 iterations to get it just right!), bold spices, and endless jars of tahini.

Blogging full-time has been equal parts exciting and terrifying. There have been moments of pure flow and inspiration… and others where I’ve stared at my screen, wondering what I’ve just done. But through it all, one thing has stayed constant: my love for creating food that feels good to eat and good to share. Recipes that are simple but flavorful, plant-based but not preachy, and always meant to be enjoyed with a little curiosity and joy.

Over the past few months, I’ve:

  • Developed some of my favorite recipes yet (that tofu korma! those dark chocolate pistachio cookies too!)

  • Started to build a rhythm that works for me creatively

  • Learned a lot about photography, photo editing, SEO, coding, and the messy, beautiful business of blogging

  • And most importantly—felt more connected to my purpose than I have in years

Oh—and in the middle of all the recipe testing and blogging, we managed to sneak in a couple of amazing trips! We spent time in Toronto and Chicago, and the food alone was worth the travel. Chicago absolutely stole my heart (and my appetite). We ate at a fully vegan taquería that blew my mind—like, flavor fireworks in every bite. I’m still dreaming about those tacos. I tried to recreate the experience with these Jackfruit Barbacoa Tacos, and I must say I got pretty close!

And then there was this incredible Italian restaurant where everything was handmade, cozy, and romantic in that rustic pasta-wine kind of way. The best part? They offered not one, but two different handmade vegan pastas—and neither felt like an afterthought. That meal totally inspired me to play more with pasta at home, which led to recipes like my Spring Lemon Pasta and more ideas I can’t wait to test.

Traveling always reminds me how much creativity there is out there—and how much I want to bring that into my kitchen and share it with all of you.
