Ingredients

  • 1 cup Raw Shelled Pistachios I find that Turkish Pistachios make the greenest pistachio butter
  • Sea Salt Optional and to taste

Instructions

  • Add the pistachios to the bowl of a food processor and process until the pistachios break down into a fine powder. Continue to blitz the nuts for 5 to 10 minutes, scraping down the sides of the bowl as you go, until smooth and creamy. It takes my food processor about 10 minutes to reach a creamy texture. It seems like a long time, but just keep processing the pistachios!
  • Once the butter has achieved your desired consistency, add a pinch of salt, if using, and pulse once or twice more to combine. Transfer to a jar or other container with an airtight lid.
  • While pistachio butter does not require refrigeration, I recommend you keep it refrigerated, as it will last much longer, for about a month versus a couple of weeks at room temperature. You can also freeze it for up to 4 months. Note oil separation is natural, just mix it up before use.
