Rainbow Veggie Wrap
Ingredients
- 4 Large Tortillas
- ¼ cup Hummus*
- 1 Avocado Sliced
- 1 Tomato Sliced
- 2 Carrots Shredded
- ½ small Purple Cabbage Shredded
- 1 Red Bell Pepper Sliced
- 1 Cucumber Sliced
- 1 cup Spinach
- ½ Red Onion or Pickled Red Onions** Thinly sliced
Instructions
- Spread hummus* onto the tortilla, leaving a little free space around the outside.
- Arrange your vegetable fillings in a wide row in the middle of the tortilla.
- Fold the sides over the fillings, then roll up your wrap, tucking the side closet to you over the fillings and rolling away from you. Firmly squeeze the wrap to contain everything.
- Slice in half and enjoy!
- Store all the leftovers separately, if you wrap these to serve, they should be served the same day, otherwise the tortillas will get very soggy.
