Ingredients

Roasted Cauliflower

  • 2 heads Cauliflower Chopped into bite-sized pieces
  • 2 to 3 tbsp Avocado Oil
  • 3 tsp Cumin
  • 2 tsp Chili Powder
  • 2 tsp Smoked Paprika
  • 1 tsp Sea Salt

Chipotle Crema*

  • 1 cup Raw Cashews Soaked in boiling water for 1 hour and drained
  • ½ cup Water
  • 3 cloves Garlic
  • ½ tsp Sea Salt
  • ¼ tsp Black Pepper
  • 2 tbsp Nutritional Yeast
  • 2 tbsp Lime Juice About the juice of 1 lime
  • 2 to 3 Chipotle Peppers in Adobo
  • 1 to 2 tbsp Adobo Sauce
  • tsp Smoked Paprika
  • ½ tsp Cumin

For Serving

  • Cilantro
  • Avocado
  • Tortillas
  • Lime Wedges
  • Purple Cabbage Shredded

Instructions

Roasted Cauliflower

  • Preheat oven to 425℉ and line a baking sheet with parchment paper or a silicone baking sheet.
  • Chop your cauliflower and add it to a mixing bowl. Add the avocado oil, cumin, chili powder, paprika, and salt. Toss to combine and pour the seasoned cauliflower onto a baking sheet and roast on the bottom rack for 15 minutes, take out and mix the cauliflower and cook for another 10 to 15 minutes or until golden brown and tender.

Chipotle Crema*

  • Pour boiling water over the cashews and let them soak for 1 hour. After an hour drain and rinse the cashews.
  • Add the cashews to a high-speed blender along the remaining ingredients. Blend on high speed until smooth, thick, and creamy, scraping down the sides with a silicone spatula as you go. This will take about 2 to 4 minutes.
  • Taste and adjust for seasonings, adding more chipotle peppers for a spicier, richer cashew cream, more salt for saltiness, more nutritional yeast for cheesy/umami flavors, or more lime juice for acidity.
  • Place in the fridge to cool and use on the tacos later.

For Serving

  • To serve, warm tortillas. Then a generous portion of cauliflower and 1 to 2 tbsp of the chipotle crema. Serve as is or garnish with lime juice/wedges, cilantro, cabbage, and / or avocado.
  • These tacos are best when fresh. Store leftover sauce in the refrigerator for up to 1 week and the cauliflower in the refrigerator for up to 3 days
