Ingredients

  • 1 recipie Tofu Bacon*
  • 8 slices Your Favorite Bread Try using my Sourdough** or Focaccia***

  • 1 large Avocado Sliced
  • 2 large Tomato Sliced, I like using heirloom or beefsteak
  • Pinch Flakey Sea Salt
  • Pinch Fresh Cracked Black Pepper
  • 1 small Head of Lettuce Like butter lettuce, green leaf lettuce, or romaine
  • 4 tbsp Plant-Based Mayo Try using my Tofu Mayo****

Instructions

  • Make a batch of my tofu bacon and tofu mayo if using. You can do this the day before!
  • Peel the avocado and slice it into thin strips. Next, slice your tomato into nice thick slices.
  • Lightly toast your bread. Next, spread mayo over the piece of toast that will be the bottom, and place the sliced avocado on the other slice of toast, the top piece of toast. Next, layer the tofu bacon on top of the toast with the mayo, followed by the tomato. I like to add a pinch of flaky sea salt and fresh cracked black pepper on top of the tomato. Next, add your lettuce on top of the tomato. Finally, put the piece of toast with the avocado on top and crust it together and enjoy!
  • Store any leftovers separately and make leftover sandwhichs!
