Vegan Ceviche: A Bright, Zesty Twist on a Seafood Classic
If you’re craving something fresh, light, and bursting with bold flavor—this Vegan Ceviche might just become your new go-to. Inspired by the bold citrusy flavors of traditional Latin American ceviche, this plant-based version swaps seafood for chopped hearts of palm, avocado, and cucumber. It’s zingy, herb-packed, and perfect for summer days when you want something cool and nourishing. Whether you’re serving it as an appetizer, light lunch, or a party snack with chips, this ceviche brings major flavor with minimal effort.
The History and Inspiration Behind This Recipe
Ceviche is a dish that originated in coastal regions of Latin America—most notably Peru—where fresh seafood is marinated in citrus juice, often lime, and mixed with ingredients like chili, onions, and cilantro. It’s known for its bright, punchy flavor and minimal cooking (thanks to the citrus “cooking” the seafood).
As someone who leans into plant-based eating, I wanted to capture the spirit of ceviche without relying on fish. Hearts of palm offer the perfect tender, briny bite, and paired with creamy avocado and the crunch of cucumber, they transform into something that hits all the same refreshing notes. I first made this vegan version for a summer patio party, and it disappeared in minutes—people were scooping it up faster than the chips could hold up, and everyone was hounding me for the recipe! From that moment on, it became a staple in my warm-weather recipe rotation.

Tips For The Best Vegan Ceviche
For the best results, follow these simple tips to perfect your Vegan Ceviche every time:
-
Let It Marinate: Give it at least an hour in the fridge for the flavors to really come together.
-
Cut Everything Evenly: Small, uniform pieces make for the best texture and flavor balance in each bite.
-
Use Fresh Citrus: Don’t skip out on fresh limes—bottled juice just doesn’t deliver the same punch.
-
Add Avocado Last: To keep it looking its best, stir in the avocado right before serving.
-
Serve It Cold: Ceviche is meant to be served chilled—keep it refrigerated until you’re ready to eat for maximum refreshment.
