They’re soft, chewy, and perfectly snackable, making them ideal for busy days when you want something wholesome that still feels indulgent.

The History and Inspiration Behind This Recipe

No-bake energy bites and cookie–dough–style snacks have become a modern staple in plant-based kitchens, drawing inspiration from traditional desserts while swapping refined ingredients for whole, nutrient-dense alternatives. Dates, in particular, have been used for centuries as a natural sweetener across many cultures, prized for their caramel-like flavor and ability to add sweetness without added sugar. When blended into snacks like these, they create that classic cookie dough texture in a more nourishing way.

The inspiration for these bites comes from wanting a snack that feels comforting and familiar while still supporting everyday wellness. Cookie dough has always been a favorite treat, but these bites channel that nostalgic flavor into something you can feel good about enjoying regularly. With healthy fats from nut butter, fiber-rich oats and dates, plant-based protein from hemp seeds, and just enough chocolate to make them fun, they’re a snack I love keeping on hand for afternoons, workouts, or quick bites between meals.

Tips For The Best Date Cookie Dough Bites

For the best results, follow these simple tips to perfect your Date Cookie Dough Bites every time:

  • Use soft dates: Medjool dates work best, as their sticky texture helps everything blend smoothly into a cohesive dough.

  • Adjust the texture as needed: If the mixture feels too dry, add a spoonful of nut butter or a splash of water; if it’s too sticky, mix in a bit more oats.

  • Pulse, don’t puree: Blend the mixture just until combined to maintain a chewy, cookie–dough–like texture rather than a paste.

  • Chill before serving: Letting the bites rest in the fridge helps them firm up and improves both texture and flavor.

Equipment

  • Food Processor
  • Medium Skillet
  • Baking Sheet

Ingredients

  • 3 cups Medjool Dates Pitted
  • cup Sun Butter or Peanut Butter Or nut butter of choice
  • 1 tbsp Vanilla Bean Paste or Vanilla Extract
  • ¾ tsp Sea Salt
  • 1 cup Oats Gluten-free if needed
  • ½ cup Hemp Seeds
  • 1 to 2 tbsp Plant-Based Milk Optional
  • ½ cup Dark Chocolate Chips

Instructions

  • Place the pitted dates, sun butter or peanut butter, vanilla, and salt into a food processor and blitz until they come together as a paste. Note, if your dates are dry, you can soak them in boiling water for 5 to 10 minutes, drain, and use. This will plump them back up.
  • Place a skillet over medium heat and add your oats. Mix frequently until the oats smell nutty and are starting to turn a light golden color. This should take about 5 minutes.
  • Add the toasted oats and hemp seeds to the food processor and pulse until the oats and hemp seeds are incorporated. If the mixture is still very dry and will not hold together, add in the plant-based milk, starting with the lesser amount, as you do not want these to get too wet. Add in the chocolate chips and pulse until the chocolate chips are distributed in the mixture.
  • Using a cookie scoop or your hands, roll the mixture into bite sized ball and place on a baking sheet. Once done, place in the fridge for 30 minutes to chill, and then you have a healthy snack!
  • Storage Instructions: Store Date Cookie Dough Bites in an airtight container in the refrigerator for up to 1 week. For longer storage, freeze the bites in a sealed container for up to 3 months.
