Ingredients
Polenta
- 1 cup Polenta
- 4½ cups Water
- 2 tbsp Plant-Based Butter
- ½ tsp Sea Salt
Mushrooms
- 2 tbsp Olive Oil
- 16 oz Mixed Mushrooms Sliced
- ⅓ tsp Sea Salt
- ¼ tsp Black Pepper
- 1 tbsp Rice Vinegar
- 1 tbsp Soy Sauce or Tamari
- 2 cloves Garlic Minced
- 1 tbsp Fresh Tarragon Optional, minced
- 1 tbsp Fresh Thyme Optional, minced
- 1 tbsp Fresh Rosemary Optional, minced
- 1 tbsp Fresh Sage Optional, minced
Chimichurri
- ⅓ cup Olive Oil
- 2 tbsp White Vinegar
- 1 clove Garlic Minced
- ½ tsp Sea Salt
- ¼ tsp Dried Oregano
- ¼ tsp Red Pepper Flakes
- ¼ tsp Smoked Paprika
- ¼ tsp Black Pepper
- 1 bunch Fresh Flat-Leaf Parsley

Polenta
- In a medium pot, bring 3 cups of water to a high simmer. Slowly whisk in the polenta. Add 1 more cup of water and simmer for 15 minutes, stirring frequently. If your polenta is very thick, whisk in the remaining ½ cup of water. The polenta should be creamy.
- Turn off the heat and whisk in the butter and sea salt. Cover and let stand for 5 minutes. Season to taste and serve hot.

- In a large cast-iron skillet, heat the oil over medium heat. Add about half of the mushrooms, salt, and pepper, and toss to coat. Let the mushrooms cook, without stirring, for 2 to 3 minutes.
