Plant-Based Stuffed Shells
Equipment
- Large Pot
- Ziplock Bag or Pastry Bag
- 9” x 13” Baking Pan
Ingredients
- 12 oz Jumbo Pasta Shells Gluten-Free if needed
- 2 batchs Tofu Ricotta* Or store-bough plant-based ricotta
- 1 batch Vegan Pesto** Or store-bought vegan pesto
- 1 batch Marinara Sauce*** Or store-bought marinara sauce
Instructions
- Preheat the oven to 350℉.
- Bring a large pot of water to a boil and add the jumbo shells. Cook for one to two minutes less than the package instructions. Do not overcook the pasta, as the pasta will continue to cook while baking in a later step. Drain and rinse the shells with cold water and set aside. Some of the shells will likely break, but you do not necessarily need the whole package, so that is okay!
- Prepare the tofu ricotta*, vegan pesto**, and marinara sauce***. All of these can be made ahead! Then add about ½ of the vegan pesto, which should be about ½ a cup, to the tofu ricotta and mix well.
- In the 9”x13” baking pan, evenly spread about 1 cup of the marinara sauce in the bottom.
- Put your tofu ricotta into a ziplock bag or a pastry bag and cut the end off. Gently pipe about 2 to 3 tbsp of the ricotta into each shell and arrange the shells on top of the marinara sauce in your baking pan.
- Spoon the remaining marinara and pesto sauce over the shells in the baking pan. Place the pan in the oven and cook uncovered for about 25 to 30 minutes, and serve!
- Storage Instructions: Store any leftover shells in an airtight container in the refrigerator for up to 4 days. You can also freeze the shells after they have been stuffed but before they are baked; place them on a baking sheet to flash-freeze, then transfer to a freezer-safe bag for up to 2 months.
- Reheating Instructions: Reheat individual portions in the microwave for 2 minutes or until hot. If reheating a whole tray from the fridge, cover with foil and bake at 350°F for about 20 minutes; if baking from frozen, increase the bake time to 45 minutes and keep the tray covered with foil to prevent the pasta from drying out.
