Classic Tofu Veggie Sandwich
Ingredients
- 1 batch Tofu Chicken or other vegan deli meat
- 1 batch Tofu Mayo or store bought, Follow Your Heart Veganaise is great
- 1 batch Focaccia or other bread of choice
- 2 Tomatoes Thinly sliced
- 2 Avocado Thinly Sliced
- 1 bunch Spinach Cleaned and dried
- 1 small Cucumber Thinly sliced
- Pickled Red Onions* Optional
- Mustard of Choice
Instructions
- Made 1 batch of tofu chicken**, I recommend doing the shredded version.
- Make 1 batch of tofu mayo*** or use store bought Follow Your Heart Vegenaise is great.
- Make 1 batch of Focaccia**** or other bread of your choice, like sourdough***** or French Country Bread******
- After you have your tofu chicken, tofu mayo, and focaccia made, you can thinly slice your tomato and avocado.
- Now you can begin to assemble your sandwiches. Place mayo on one slice of the bread and mustard on the other. Then add the tofu chicken on the bottom followed by our tomatoes, for extra flavor, sprinkle a little salt and pepper over your tomato slices, spinach, pickles, and avocado.
- Slice in half and serve with a salad, or soup, or enjoy on its own!
- Store all leftovers separately in airtight containers in the fridge, except for your bread, for 3 to 4 days. Store your bread on the country in a bread bag for 4 to 5 days.
