Cold Cucumber Soup: A Chilled and Creamy Summer Staple

This Cold Cucumber Soup is everything you want on a hot day: cool, crisp, refreshing, and surprisingly satisfying. It’s the kind of dish that feels like pressing a chilled glass against your skin in soup form—light yet creamy, herbaceous, and bursting with fresh cucumber flavor. With just a few ingredients and no need to turn on the stove, this recipe is perfect for when the temperatures are climbing and you still want something that feels put together.

The History and Inspiration Behind This Recipe

Cold cucumber soup has roots in many global cuisines—from Eastern Europe’s tarator and okroshka to Spain’s cucumber-laced variations of gazpacho. This recipe is inspired by those cooling traditions but made a little more modern and plant-based.

When I was younger, the cucumber plants in our garden went off! We couldn’t give away cucumbers fast enough—there were just too many! My parents had to get creative, coming up with ways to use them that didn’t involve yet another salad. That’s when my mom stumbled across a recipe for cold cucumber soup. It quickly became a summer staple in our house, something we’d look forward to with every overflowing harvest. This version pays homage to those chilly bowls of cucumber soup we ate growing up—simple, soothing, and full of garden freshness.

Why You’ll Love This Cold Cucumber Soup

You’ll love this Cold Cucumber Soup because it’s the ultimate no-cook recipe that still delivers big on flavor. It’s creamy without being heavy, packs a punch of brightness from lemon and herbs, and is endlessly customizable. Whether you’re eating it as a light lunch, an appetizer, or a cooling side to something grilled, it feels like a little gift to yourself on a hot day.

Fun Flavor Variations For Your Cold Cucumber Soup

Why settle for plain when you can get creative with different flavor combinations:

  • Add avocado: For a richer texture and a gorgeous pale green hue, blend in half a ripe avocado.

  • Swap the herbs: basil is a classic, but fresh dill, mint, or cilantro can change up the flavor profile completely.

  • Lemony Ginger Twist: Add a tablespoon of freshly grated ginger and a bit of extra lemon juice and zest for a zippy, immune-boosting variation with a little kick.

  • Creamy Tahini Blend: Swap out yogurt or cashew cream for a spoonful of tahini to add nutty depth and make it extra satisfying—great with a sprinkle of za’atar on top.

  • Green Goddess Style: Blend in a handful of baby spinach or kale, plus fresh tarragon and chives, for a vibrant green hue and more herby, garden-like flavor.

  • Top with roasted chickpeas or croutons: For a little crunch to contrast the smoothness. Try adding my crispy roasted chickpeas!

  • Serve it as a starter: Kick off a summer dinner party with chilled cucumber soup in little glasses.

  • Too lazy to make a sandwich, pair with crusty bread: Contrast this cold refreshing soup with a nice piece of toast using my sourdough or French country bread! Not feeling toasted bread? Try it with my Focaccia!
  • Make it picnic-ready: Pack it in a thermos and enjoy it outdoors with a crusty baguette.

  • Garnish it boldly: Top with a swirl of olive oil, lemon zest, extra cucumber slices, or extra chopped dill, mint, chives, or basil for a pretty finish.

Tips For The Best Cold Cucumber Soup

For the best results, follow these simple tips to perfect your Cold Cucumber Soup every time:

  • Use seedless cucumbers or remove the seeds: This keeps the soup from becoming too watery or bitter.

  • Adjust the consistency to your liking: Add a splash of water or plant-based milk if it’s too thick, or add in some extra yogurt or silken tofu to make it thicker.

  • Let it rest: If you have the time, chill the soup for at least 4 hours before serving to let the flavors meld.

  • Blend well: A high-speed blender gives the smoothest texture, but if you are in a pinch, a food processor will also do the job.

Equipment

  • Small Sauté Pan or Skillet
  • High Speed Blender

Ingredients

  • 1 tbsp Olive Oil
  • 1 Shallot Diced
  • 2 cloves Garlic Diced
  • 1 Jalapeño Seeded and diced
  • 3 English Cucumbers Roughly peeled, de-seeded, and cut into chunks.
  • 10 oz Silken Tofu Patted dry
  • 1 cup Plain Plant-Based Greek Yogurt
  • ¾ cup Basil Leaves Loosely packed
  • cup Olive Oil Plus more for serving
  • 3 tbsp Lemon Juice About the juice of 1½ lemons
  • 2 tbsp Fresh Dill Plus more for serving
  • 1 tsp Sea Salt
  • ½ tsp Fresh Black Pepper Plus more for serving
  • ½ tsp Agave
  • Fresh Dil, Mint or Chives For serving

Instructions

  • Place your small sauté pan over medium heat and add the 1 tbsp of olive oil. Once hot, add the shallot and sauté until it begins to brown, about 5 minutes. Next, add your jalapeno, and cook for about 3 minutes. Finally, add in your garlic and cook for about 1 minute, or until the garlic is fragrant. Remove from the heat and add to your high-speed blender.
  • Next, get your cucumbers ready. You can peel and remove some but not all of the skin. Next, cut the cucumbers down the middle and remove all of the seeds. Now add your cucumbers, silken tofu, yogurt, basil, lemon juice, dill, salt, agave, your shallot mix, and several grinds of pepper and blend until smooth. When the blender is going, slowly pour in the olive oil, so it emulsifies and helps to thicken the soup. Chill for at least 4 hours.
  • Ladle into bowls and drizzle with olive oil. Garnish with the extra cucumber slices, freshly ground black pepper, and fresh dill, mint, and/or chives. Serve cold.
