Jam Oatmeal Bars

Ingredients
- 2 cup Old-Fashipned Oats Gluten-Free if needed
- ¼ cup Maple Syrup or Agave
- ¼ cup Peanut Butter
- ¼ cup All-Purpose Flour or 1:1 Gluten-Free Flour
- ¼ cup Plain Unsweetened Plant-Based Milk
- 1 tsp Vanilla Extract or Vanilla Bean Paste
- ½ tsp Cinnamon
- ¼ tsp Baking Powder
- ⅔ cup Fruit Spread* or Jam
Instructions
- Preheat the oven to 350℉ and line an 8” × 8” baking dish with parchment paper, leaving a few inches of overhang on two sides so you can easily lift the bars out when they’re cooled.
- Place the oats into the bowl of a food processor or blender and blitz to grind into a coarse flour and add to the bowl of a stand mixer or mixing bowl.
- Place the maple syrup or agave and peanut butter into a medium bowl and warm in the microwave for about 15 seconds. Mix and add to the bowl with the oats. To the same bowl, add in the flour, plant-based milk, vanilla, cinnamon, and baking powder, to the bowl and mix together until the batter holds together when pressed between your fingers. It should resemble a still cookie dough.
- Set aside ¾ cup of the batter.
- Place the remaining batter into the bottom of the prepared 8” × 8” baking dish and press down evenly to cover the bottom of the pan in an even layer. Next, spread the fruit spread or jam in an even layer on top of the crust. Finally, crumble the ¾ cup of the remaining batter over the top to create a crumble over the jam and press it down slightly so it will stick in the jam.
- Bake the bars for 22 to 24 minutes, remove from the oven, and let cool completely in the pan. Once the bars are cooled, lift them out using the parchment paper and slice them into bars.
- Storage Instructions: Store the bars in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week. These are excellent for freezing; simply wrap individual bars in parchment paper and store in a freezer bag for up to 3 months.
