Vegetable Lasagna

Vegetable Lasagna: Hearty, Saucy, And Completely Plant-Based
The lasagna so good it will make everyone forget it’s vegan. This is not a salad pretending to be lasagna. This vegetable lasagna is the real deal: layers of tender roasted vegetables, creamy lemon-herb tofu ricotta, fresh spinach, and rich marinara sauce stacked between perfectly cooked noodles and finished with bubbling, golden plant-based mozzarella. It is hearty, deeply satisfying, and the kind of dish that earns a standing ovation at any table regardless of whether anyone at that table considers themselves a vegan. This is comfort food at its absolute finest, and it just happens to be completely plant-based.
The History And Inspiration Behind This Recipe
Lasagna is one of the oldest pasta dishes in Italian culinary history, with references to layered baked pasta dishes appearing in medieval Italian cookbooks as far back as the 14th century. The dish as we know it today, with its alternating layers of pasta, sauce, and filling, became deeply embedded in the regional cooking of Emilia-Romagna in northern Italy, where the classic version is made with fresh egg pasta, ragù, and béchamel. Over centuries, it spread across Italy and eventually the world, taking on countless regional and personal variations that reflect the ingredients and traditions of wherever it landed.
The vegetable lasagna has its own long and beloved history within that tradition, rooted in the Italian practice of cucina povera and the natural abundance of Mediterranean vegetables. Roasting the vegetables before layering them into the lasagna draws out their natural sweetness and concentrates their flavour in a way raw or simply sautéed vegetables cannot match, and it is the step that elevates this lasagna from good to genuinely extraordinary. The tofu ricotta, bright with lemon zest and fresh herbs, is a plant-based take on the classic ricotta layer that is so creamy and flavourful it is virtually indistinguishable from the original. And as the weather turns colder and the days get shorter, I find myself craving dishes that feel like a warm embrace, and I do not think anything, maybe besides a good soup, says comfort quite like a rich and delicious lasagna carefully layered with love.
Why You’ll Love This Vegetable Lasagna
This vegetable lasagna earns its place as the ultimate plant-based comfort food because it delivers on every single front that a great lasagna should. Roasted mushrooms, red pepper, zucchini, and onion bring a deep, caramelised savouriness to each layer, making the filling feel substantial and satisfying rather than an afterthought. The tofu ricotta is creamy, lemony, and herb-forward in a way that makes it genuinely exciting rather than simply a dairy-free substitute, and the nutritional yeast adds a rich, cheesy depth throughout every layer. It serves eight generously, reheats beautifully, and is the kind of dish that actually gets better the next day as all the flavours settle and meld together overnight. It is also easily made gluten-free with your favourite gluten-free lasagna noodles, making it a crowd-pleasing option for almost any table.
Fun Flavor Variations For Your Vegetable Lasagna
Why settle for plain when you can get creative with different flavor combinations:
- Swapping the marinara for a creamy plant-based béchamel: A rich, garlicky plant-based béchamel made from oat milk and plant-based butter in place of or layered alongside the marinara creates a white lasagna variation that is luxuriously creamy and feels particularly elegant and special for a dinner party or holiday table.
- Adding roasted eggplant to the vegetable layer for extra heartiness: Roasted eggplant chunks mixed in with the other vegetables add a meaty, yielding texture and a deep, smoky flavour that makes the filling feel even more substantial and satisfying, and they pair beautifully with the lemon-herb ricotta.
- Stirring sun-dried tomatoes into the ricotta for extra depth: A handful of finely chopped sun-dried tomatoes blended into the tofu ricotta adds a concentrated, intensely savoury sweetness that makes the ricotta layer even more complex and interesting without overpowering the bright lemon and herb flavours.
- Using a spicy arrabbiata sauce in place of marinara: Swapping the marinara for a fiery arrabbiata sauce adds a bold, chili-forward heat to every layer that makes the whole lasagna feel more exciting and dynamic, and it pairs particularly well with the mild creaminess of the tofu ricotta. If you really want something special, try using my Marinara Sauce.
- Adding Italian sausage-style plant-based crumbles to the vegetable layer: A handful of seasoned plant-based sausage crumbles browned in a pan and layered in with the roasted vegetables adds a bold, fennel-forward savouriness that makes the lasagna feel even more hearty and deeply flavoured in the best possible way.
Serving Ideas For Your Vegetable Lasagna
This vegetable lasagna is incredibly versatile and can be used in various ways:
- Serving as the centrepiece of a Sunday family dinner: This lasagna is generous enough to feed eight people and impressive enough to feel like a proper occasion, making it the perfect dish to anchor a relaxed Sunday dinner that brings everyone to the table and keeps them there for seconds.
- Pairing with a simple green salad and garlic bread for a complete meal: A crisp green salad dressed with a bright vinaigrette and a side of good garlic bread are all this lasagna needs to become a complete and deeply satisfying meal that covers every base without requiring any additional effort.
- Making ahead for a stress-free dinner party: This lasagna can be fully assembled the day before, covered, and refrigerated overnight, then baked straight from the fridge with an extra 10 minutes added to the bake time. It is one of the most genuinely stress-free dinner party mains you can make, and it always impresses.
- Portioning and freezing for future weeknight dinners: Individual portions wrapped tightly in foil and stored in the freezer mean that a future version of you has a restaurant-quality dinner waiting with almost zero effort required, which is one of the most generous things you can do for yourself on a Sunday afternoon.
- Bringing to a potluck or gathering as a guaranteed crowd-pleaser: Lasagna travels well, feeds a crowd, and is one of those universally beloved dishes that everyone gravitates toward at a potluck, and this plant-based version consistently surprises and impresses people who would never seek out a vegan dish on their own.
Tips For The Best Vegetable Lasagna
For the best results, follow these simple tips to perfect your vegetable lasagna every time:
- Roasting the vegetables at high heat before assembling: The 425°F roasting step is non-negotiable. It removes excess moisture from the vegetables that would otherwise make the lasagna watery, and it develops a deep, caramelised flavour that raw or sautéed vegetables simply cannot replicate. Do not skip this step and do not crowd the pan, or the vegetables will steam rather than roast.
- Cooking the noodles just to al dente before layering: Since the noodles continue to cook in the oven during the bake, pulling them out of the water while they still have a slight bite prevents them from going soft and mushy in the finished lasagna. Toss them in a little olive oil immediately after draining to prevent them from sticking together while you assemble.
- Spreading each layer evenly and all the way to the edges: Uneven layers mean some bites are all noodle and no filling, and others are all filling and no noodle. Take a minute to spread each component, especially the ricotta, all the way to the edges of the dish for a lasagna that is consistent and beautiful all the way through.
- Letting the lasagna rest for the full 20 minutes before slicing: This is the most important tip in the entire recipe and the hardest one to follow. Cutting into a lasagna straight from the oven results in a collapsing, sliding mess that looks nothing like the beautiful layered dish you assembled. A full 20-minute rest allows everything to set properly and gives you clean, gorgeous slices that hold their shape on the plate.
- Covering the dish with foil for the first half of the bake if the top browns too quickly: If the cheese on top is browning faster than you would like before the centre is fully heated through, loosely tent the dish with foil and remove it for the last 10 minutes of baking to let the top get bubbly and golden without burning.
The Final Bite
This vegetable lasagna is the ultimate plant-based comfort food: deeply satisfying, generously layered, and packed with roasted vegetables, creamy lemon-herb tofu ricotta, and rich marinara from top to bottom. Whether you are making it for a weeknight family dinner, a dinner party, or a freezer stash of future meals, it delivers every single time and consistently wins over even the most sceptical non-vegan at the table. This is the kind of recipe that becomes a household staple from the very first time you make it. Instructions
Lasanga Filling
- Preheat the oven to 425°F and line a baking sheet with parchment paper or a silicone baking mat. Oil a 9 x 13 inch baking dish.
- Place the mushrooms, red pepper, zucchini, and onion on the baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat. Spread evenly on the baking sheet and roast for 20 to 25 minutes, or until tender and browned around the edges.
- Reduce the oven temperature to 400°F.
- Bring a large pot of salted water to a boil and prepare the lasagna noodles according to the package instructions, cooking until al dente. Drain and toss with a drizzle of olive oil to prevent sticking and set aside.
Marinara Sauce
- Pour the tomatoes into a large bowl and crush with your hands. Pour 1 cup of water into the tomato can and slosh it around to get the tomato juices; reserve for later.
- Place a large skillet, please do not use a deep pot or pan, over medium heat. Add the olive oil and heat it. Once the oil is hot, add the garlic and cook until it begins to sizzle, not brown.
- Add the tomato paste and let it caramelize for about 30 seconds. Next, add the tomatoes, the reserved tomato water, red pepper flakes, and sea salt. Mix to incorporate everything.
- Place the basil sprig into the skillet and let it wilt. Once wilted, submerge the basil in the sauce. Simmer the sauce until it begins to thicken, and the oil on the surface is a deep orange. This should take about 15 to 20 minutes. Remove the basil sprig and set aside for later.
Tofu Ricotta
- Make the tofu ricotta. Place all the ingredients: tofu, nutritional yeast, lemon zest, lemon juice, garlic, salt, and herbs into a food processor and process until smooth. Stop to scrape down the sides as needed.
Assembly
- To assemble the lasagna, spread 1 cup of the marinara sauce at the bottom of the prepared baking dish. Top with a layer of noodles, followed by half the ricotta mixture. Spread the ricotta in an even layer, then arrange half the spinach evenly on top. Top with half the vegetables and dot with ⅔ cup of the remaining marinara sauce.
- Repeat with another layer of noodles, followed by the remaining ricotta, spinach, vegetables, and another ⅔ cup of marinara sauce. Top with the remaining noodles.
- Spread the remaining ⅔ cup marinara over the pasta, then evenly sprinkle with the mozzarella and nutritional yeast. Bake the lasagna in the oven at 400°F for 30 minutes, or until the cheese is browned and bubbling. Let stand for 20 minutes before garnishing with fresh basil or parsley, slicing, and serving.
- Storage Instructions: Store leftover vegetable lasagna in an airtight container in the refrigerator for up to 5 days. The flavours deepen significantly overnight, making next-day lasagna arguably even better than the first serving. To freeze, wrap individual portions tightly in foil and store in a freezer-safe container for up to 3 months.
- Reheating Instructions: To reheat from the refrigerator, place in a 350°F oven, covered with foil, for 20 minutes, until heated through, removing the foil for the last 5 minutes to revive the bubbly top. Individual portions can be microwaved in 30-second intervals until hot. From frozen, thaw overnight in the refrigerator and reheat in a 350°F oven covered with foil for 25 to 30 minutes, removing the foil for the last 5 minutes.
