- 1½ cups Potatoes (Chopped into ½ inch cubes)
- 1 Red Bell Pepper (Chopped into ½ inch cubes)
- 1 Green Bell Pepper (Chopped into ½ inch cubes)
- 1 Whilte Onion (Diced)
- 4 cloves Garlic (Minced)
- 2 tbsp Avocado Oil
- 1½ tsp Chili Powder
- 1½ tsp Cumin
- ½ tsp Smoked Paprika
- ½ tsp Sea Salt
- 1 14 oz can Pinto Beans (Drained and rinsed)
- 2 Chipotle Peppers in Adobo (Diced)
- 1 cup Plant-Based Shredded Cheese
- ½ cup Nutritional Yeast
- 1 tbsp Lime Juice
- 3 cups Red Enchilada Sauce of Choice
- 10 to 12 medium sized Tortillias

Preheat the oven to 400℉ and line a baking sheet with parchment paper or a silicone baking mat. Chop the potatoes, bell peppers, onion, and garlic. Add to a mixing bowl. Next, add in the avocado oil, chili powder, cumin, paprika, and salt. Toss to evenly coat. Then pour the veggies onto the prepared baking sheet and roast in the oven for 25 to 30 minutes, or until the potatoes are fork-tender.

Once the veggies are done roasting, reduce the oven temperature to 350F. Add the veggies back into a mixing bowl, along with the drained and rinsed pinto beans, cooked soy curls, chipotle peppers, nutritional yeast, lime juice, ½ cup of the plant-based shredded cheese, and ¾ to 1 cup of the enchilada sauce. Mix until just combined.

Add 1 cup of the enchilada sauce to the bottom of the baking dish and spread it out evenly.

Fill the tortillas with about ¾ cup of the enchilada mixture. Then roll up the tortillas and place them, seam side down, in the casserole dish. Repeat for the rest. If you have any leftover filling, you can spread it on top of the tortillas. Spread all of the remaining enchilada sauce on top of the tortillas until they are completely covered in sauce. Then top with the remaining ½ cup of plant-based shredded cheese.
