Roasted Zucchini Salad
Roasted Zucchini Salad: Bold, Fresh, And Bursting With Summer Flavor
The summer salad that finally lets zucchini steal the show. If zucchini has spent its whole culinary life playing second fiddle, this roasted zucchini salad is its long-overdue moment in the spotlight. Charred, golden zucchini and crispy roasted chickpeas are tossed with sweet summer corn, hearty farro, juicy cherry tomatoes, and fresh herbs, then finished with a warm za’atar and sumac dressing that is fragrant, tangy, and absolutely stunning. This is the salad that finally lets zucchini be the star it was always meant to be, and trust us, it does not disappoint.
The History And Inspiration Behind This Recipe
Zucchini has been a staple of Mediterranean and Middle Eastern cooking for centuries, where it is celebrated rather than treated as an afterthought. In cuisines across Lebanon, Turkey, and Greece, zucchini is roasted, stuffed, stewed, and dressed with bold spices and fresh herbs in ways that honour the vegetable rather than simply using it to fill space. The spices in the dressing here, za’atar, sumac, and coriander, are deeply rooted in that same tradition, and together they bring a brightness and depth to the dish that feels both ancient and completely fresh.
The real inspiration for this recipe, though, came straight from the garden. After a particularly generous zucchini season, the question stopped being what to make for dinner and started being what to do with all of this zucchini. The answer was to stop treating it as a background player and build an entire dish around it. Zucchini has always been the supporting actress of the vegetable world, quietly doing her job in the background while other vegetables get the credit. This salad is her starring role, and she is absolutely magnificent in it.
Why You’ll Love This Roasted Zucchini Salad
This roasted zucchini salad is the kind of dish that works for almost any occasion, from a casual weeknight dinner to a summer potluck where you want to bring something that genuinely impresses. Roasting the zucchini at high heat transforms it completely, drawing out its natural sweetness and developing a caramelised, slightly charred exterior that is worlds away from the limp, watery zucchini you might be used to. The farro adds a nutty, chewy base that makes this a genuinely satisfying meal rather than a side dish. At the same time, the warm spiced dressing, bloomed in olive oil with fresh garlic, ties every component together in a way that feels layered and complex without being complicated. It’s fully plant-based, packed with vegetables, and honestly one of the most flavourful things to come out of a summer garden haul.
Fun Flavor Variations For Your Roasted Zucchini Salad
Why settle for plain when you can get creative with different flavor combinations:
- Swapping the farro for another grain to change the base: Freekeh, bulgur wheat, or even cooked quinoa all work beautifully here if farro isn’t available or you need a gluten-free option, and each one brings its own slightly different texture and nuttiness to the finished salad.
- Adding crumbled plant-based feta for a tangy, creamy contrast: A generous crumble of vegan feta over the top just before serving adds a salty, tangy richness that pairs beautifully with the warm spiced dressing and the sweetness of the corn and cherry tomatoes.
- Throwing in other summer vegetables from the garden: Yellow squash, roasted bell peppers, or halved baby eggplant can all be added to the sheet pan alongside the zucchini and chickpeas, making this an incredibly flexible recipe for using up whatever summer produce needs to be dealt with.
- Using different fresh herbs to shift the flavour profile: Basil, dill, or a combination of both can stand in for or be added alongside the parsley and mint, and each one brings a slightly different freshness that works beautifully with the za’atar dressing.
- Topping with toasted pine nuts or slivered almonds for extra crunch: A small handful of toasted nuts scattered over the finished salad adds a buttery, golden crunch that plays really well against the crispy chickpeas and the chewy farro, and makes the whole bowl feel a little more special.
Serving Ideas For Your Roasted Zucchini Salad
This roasted zucchini salad is incredibly versatile and can be used in various ways:
- Serving warm as a hearty standalone meal: Because of the farro and chickpeas, this salad is filling enough to be a complete dinner on its own, and it is at its absolute best served warm right after the dressing is poured over and everything is tossed together.
- Packing up for a summer potluck or picnic: This salad holds up beautifully at room temperature, which makes it an ideal dish to bring to a gathering where it might sit out for a little while before being served, and it travels well without losing any of its character.
- Serving alongside grilled flatbread or warm pita: A stack of warm pita or grilled flatbread on the side is perfect for scooping up the salad and soaking up any extra dressing at the bottom of the bowl, and it makes the meal feel a little more abundant and satisfying.
- Meal prepping for the week ahead: The components of this salad store well separately in the fridge, so cooking a big batch of farro and roasting extra zucchini and chickpeas at the start of the week means quick, flavourful lunches are only an assembly job away.
- Spooning over greens to make it a more traditional salad: A bed of arugula, baby spinach, or mixed greens underneath the roasted zucchini salad adds extra freshness and turns it into something that feels even more vibrant and verdant, especially for a summer lunch.
Tips For The Best Roasted Zucchini Salad
For the best results, follow these simple tips to perfect your roasted zucchini salad every time:
- Roasting at high heat for maximum caramelisation: The 450°F oven is not an accident. That high heat is what gives the zucchini its gorgeous golden char and transforms the chickpeas from soft and bland into crispy, golden little nuggets of flavour. A lower temperature will give you steamed, soggy vegetables, which is exactly what we are trying to avoid.
- Cutting the zucchini into irregular half-moons for better texture: The uneven edges created by irregular cuts give the zucchini more surface area to caramelise and char in the oven, and they make the finished salad feel more rustic and interesting than perfectly uniform pieces would.
- Using the microwave corn hack for easy, clean cobs: Microwaving the ear of corn for 2 minutes and then squeezing it out from the silk end is a genuinely life-changing kitchen trick that removes the husk and silk cleanly in one move, and the corn comes out perfectly cooked with no mess and no boiling a giant pot of water.
- Blooming the spices in warm olive oil for the dressing: Toasting the garlic and spices in the oil rather than whisking them together cold is the step that makes this dressing extraordinary. The heat draws out the aromatic oils in the za’atar, sumac, and coriander and infuses them into the olive oil, creating a dressing that is deeply fragrant and complex in a way a cold-mixed dressing simply cannot match.
- Tasting and adjusting the seasoning before serving: The saltiness of chickpeas can vary depending on how well they are rinsed, and farro absorbs seasoning as it cooks, so always taste the finished salad before serving and adjust with extra salt, lemon juice, or a pinch more sumac as needed to get everything balanced and bright.

Dressing
- ¼ cup Olive Oil
- 3 cloves Garlic
- 1 tsp Za’atar
- ½ tsp Dried Mint
- ½ tsp Coriander
- ½ tsp Sumac
- ¼ tsp Sea Salt
- ½ tbsp Agave or Maple Syrup
- ½ tbsp Lemon Juice
Instructions
Salad
- Preheat the oven to 450°F and line a sheet pan with parchment paper or a silicone baking mat.
- Slice the zucchini in half lengthwise, and chop into irregular half-moons. Place the zucchini onto the prepared pan along with the drained and rinsed chickpeas. Drizzle with the olive oil, then add the garlic powder, onion powder, salt, and pepper. Toss to coat everything and roast in the oven for 25 to 30 minutes, or until the chickpeas are crisp and golden, and the zucchini has some char.
- Cut the base of the ear of corn off. Place the ear in the microwave for 2 minutes. It will be hot, but remove it from the microwave and squeeze the silk end of the ear of corn until the corn cob comes free. Cut the corn off the cob and repeat until you reach 1 ½ cups of corn. In my experience, this will be 2 to 3 ears of corn.
- Add the farro to a medium pot with a large pinch of kosher salt and enough water to fully submerge it. Bring to a rolling boil, then reduce the heat to medium and let the farro simmer until soft but still has some chew, about 12 minutes. Drain and add to a large serving bowl. Add the cherry tomatoes, corn, toasted zucchini and chickpeas, parsley, and mint to the bowl, and set aside.
Dressing
- Place the small skillet over medium heat; once hot, add the olive oil and garlic. Toss the garlic until it begins to smell and turns golden, about 1 minute. Take the skillet off the heat and add the za’atar, dried mint, coriander, sumac, agave, and lemon juice. Stir to combine.
- Pour the tempered spices over the salad and toss to combine. Taste and adjust the seasoning to taste. Serve warm and enjoy!
- Storage Instructions: Store leftover roasted zucchini salad in an airtight container in the refrigerator for up to 4 days. The flavours actually deepen as it sits, making it an excellent make-ahead option. If you plan to store it, consider keeping the dressing separate and tossing just before serving to keep the chickpeas as crispy as possible.
- Reheating Instructions: This salad is delicious when enjoyed cold or at room temperature straight from the fridge. If you prefer it warm, gently reheat in a skillet over medium-low heat, stirring occasionally, until warmed through.
